TASTING NOTES:

Very personal and long taste. Fine aromas of fruit (yellow pears), with mineral and milky shades and a touch of raw almonds. Intense in the mouth, complete, soft, dry and wide.

MARIAGE:

Crustaceous sea water boiled (crabs, crayfish, barnacles).
Trawlling and Rock Fresh fish (red mullet)
Scallops au gratin. Clams marinière.
Cheese board: greasy and creamy cheeses, such as Casar, Serena and Cebreiro

SERVING:

Temperatures: 9-10 ºC. Open at least half and hour before serving.

WINEMAKING:

Vintage in late October. Fermentation under 16ºC for 20 days. Daily battonnage during 80 days. It rests in tank for 10 months until bottling. 8 months in bottle before going out to the market.
